In recent years, we’ve started to see the rise of the fourth wave of coffee in various places, and it’s becoming part of everyday life in major cities like London, Berlin, New York, and Tokyo. The fourth wave celebrates the science of coffee and an obsession with detail and a perfect tasting experience. It shifts the focus to the people who craft each cup with their own style, passion, and knowledge — what we call ‘Coffee Professionals.’
That’s why we started POUR OVER LAB in 2020 — a specialty coffee shop inspired by the concept of a shared laboratory. We welcome customers who seek to discover something new about coffee through our unique theme, curated products, and passionate coffee professionals. Our motto: “The Pursuit of a Cup of Excellence Coffee.”
Why SPECIALTY COFFEE?
With the rising trend of specialty coffee, the market in Thailand has become increasingly exciting. People are becoming more aware of what specialty coffee is and are willing to pay a higher price to experience it. Thanks to the meticulous production process, this type of coffee attracts many coffee lovers who seek out distinctive, unique, and sensorial flavor profiles.
In 2019, the specialty coffee market in Thailand was valued at 2 billion baht, accounting for 10% of the roasted ground coffee segment — and it continues to grow.
Thai farmers should explore cultivating high-quality coffee varieties to enter this specialty segment. While neighboring countries like Vietnam and Indonesia focus on high volume and lower production costs, Thailand has an advantage in producing quality over quantity. With world-class growing regions such as Doi Chang, Thailand is well-positioned to compete on a global stage.
The unique and diverse flavors of Thai coffee have the potential to build a strong international reputation. By developing farmland for specialty-grade cultivation, farmers can significantly increase their income and contribute to Thailand’s growing presence in the global coffee community.

A unique highlight of Pour Over Lab is our dedication to showcasing a wide variety of brewing methods. We also proudly feature One Dutch — the only cold brew coffee machine of its kind in Thailand.

ROASTER
POUR OVER LAB is an artisan coffee roaster. We roast our coffee batch by batch with love and care, so our customers can enjoy great-tasting coffee in their everyday lives.
How we roast plays a crucial role in defining the taste and character of each cup. Our dedication to the craft has been recognized internationally — we proudly received the 4th Runner Up award at the Professional Coffee Roaster International Championship 2025.
That’s why we aim to roast in a way that brings out the best aroma and flavor unique to every type of bean.
